Our kitchen is up before the rest of Fortitude Valley, mixing, shaping and proving the day's bread and pastries by hand. We're after bakers to join that early shift. Everything here is made by hand in our own kitchen, so the bench is where the day happens. We work as a team through the early hours, scaling, mixing, shaping and watching the ovens, and we share what we know as we go. Baking techniques and recipes, oven temperatures, the different breads, how products prove. Nobody is left to work it out alone.

The role

We're looking for bakers to work the bench in our Fortitude Valley kitchen, making bread, pastry and a range of sweet and savoury baked goods by hand. You'd be working alongside the rest of the kitchen team, and there's genuine scope to learn here: baking techniques and recipes, oven operation and temperature ranges, the different breads, how products prove, and the health and safety side of the job.

What the day looks like

We're open Monday to Saturday, 7.00am to 2.00pm, and bakers work early in the morning, before the doors open. Weekends and public holidays are part of the roster. It's a hands-on shift: dough on the bench, ovens running, everyone working to the same timings.

What you'd be doing

  • Scaling ingredients accurately and mixing dough
  • Cutting, shaping and moulding dough
  • Preparing sweet and savoury pastry, fillings and a range of baked goods
  • Monitoring proving, baking and cooling times, and keeping the appearance of everything consistent
  • Understanding the full baking procedure and working to it as a team
  • Stock checks, stock rotation and clean-down
  • Understanding and following food safety and health and safety rules, which is critical here

What we're after

  • Someone happy to start early, and available weekends and public holidays
  • A team worker, because the whole kitchen runs as a team
  • Care with detail: accurate scaling, consistent shaping, timings watched
  • A serious respect for food safety and hygiene
  • Baking experience at any level, from none yet through to more than three years
